Recipe: Warming Spicy Parsnip Soup

Try this seasonal, warming spicy parsnip soup. It’s super easy to make!

I always thought parsnips were a love or hate veggie, like marmite. I’m not a parsnip fan, but I love this comforting soup, so do try it, even if you’re not on Team parsnip. This soup might change your mind!

I like serving it with a dollop of creamy Greek yoghurt & some fresh herbs, like parsley or coriander.

You can also add immune supporting garlic & fresh ginger, or a couple handfuls of dried lentils to add some energy sustaining protein & fibre.

Parsnips provide folate, vitamin C, potassium, phosphorus & carbohydrates, as well as anti-inflammatory and anti-microbial plant compounds (aka phytochemicals), so great for your immune system & supporting your energy.

Warning! This soup's spiciness level goes up a notch the next day!

Ingredients and method (Serves 4)

1 bag of parsnips (unpeeled)

2 onions or leeks

Veg stock (500ml) + hot water

1½ tsp curry powder

1 tsp cumin powder

Olive oil or butter (for cooking)

 

  1. Soften the onion/ leek in a pan with olive oil or butter.

  2. Sprinkle in the spices. Stir into the onions & cook for a couple of minute longer.

  3. Add chopped parsnips, vegetable stock & season with pepper.  Add hot water, to just cover the veg.

  4. Slow cook it for 2-3 hrs on high in a slow cooker or approx. 40mins on the stove, until parsnips are soft.

  5. Simply season, blend & serve.
